Ingredients

    Chicken Breast, no skin, 1 pound
    Sweet potato, cooked, baked in skin, without salt, 2 large (remove)
    *Flour, white, .5 cup (remove)
    Salt, 1 tsp (remove)
    Nutmeg, ground, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Garlic powder 1 tsp
    Pepper, black, 1 dash (remove)
    *Campbell's Cream of Chicken Soup (98% fat free), 1.25 cup (remove)
    Orange Juice, .5 cup (remove)
    Brown Sugar, 4 tsp packed (remove)

Directions

Make in crockpot on Low for 8-10 hours or High 3-4 hours

1. Slice sweet potatoes and place on bottom of crock pot
2. Rinse chicken, pat dry, Combine flour, salt, nutmeg, cinnamon, pepper and garlic powder. Coat each piece of chicken in flour mixture and place on top of potatoes.
3. Combine soup with remaining ingredients. Stir well. Pour over chicken.
4. Cover and cook!!!
* Great served over whole grain rice

    Recipe is from "Fix It & Forget It" cookbook & does call for 1/2 tsp grated orange rind which I didn't have & 4 oz can mushrooms. A bit bland, but hubby liked it. High carb if you serve with rice since it already has has sweet potatoes - 1/30/09

    This is a good recipe but it still needs some tweaking for flavor. It is a bit bland. I would use citrus zest and a bit more oj. It is a great idea though! - 12/1/07
