Ingredients

    6 cups low-salt, low-fat chicken broth
    4 cups potatoes peeled and cubed
    1/4 cup minced onion
    1/2 tsp white pepper
    1 tsp salt
    1 tsp black pepper
    8 oz cream cheese cubed

Directions

Simmer potatoes in broth + seasonings until potatoes are soft (about 45 minutes). Mash potatoes (a handheld beater works well) until soup is mostly but not totally smooth-- small lumps really help the texture. Add cubed cream cheese and stir to melt. Serve hot or cold.

    Bad
    I made this as it is, and it was very watery and flavorless. I doubled the amount of potatoes and greatly increased the seasonings and it was ok then. Still not as good as I hoped however. - 1/22/12
