Ingredients

1/2 box cooked spaghetti
10 oz frozen chopped spinach, thawed and drained
1 can diced tomatoes
1 oz. feta cheese
1/4 cup grated parmesan cheese
2 TBSP olive oil
3 eggs
1/4 cup Skim Milk
2 TBSP Mccormick spaghetti seasoning
Directions
Cook 1/2 package of spaghetti according to al dente instructions on the box. Drain spaghetti and set aside. Preheat oven to 350 degrees. Spray a 13x5 casserole dish with non-fat cooking spray. Whisk one egg and 2 TBSP Olive oil in a mixing bowl with a generous pinch of salt and pepper. Add in cooked spaghetti, make sure to coat the spaghetti well with the egg mixture. Then, add spaghetti to casserole dish- spread out evenly.
In a separate bowl, whisk remaining two eggs with milk and spaghetti seasoning. Gradually add in feta, parmesan cheese and chopped spinach. Spread this mixture over top of the spaghetti. Then, spread a can of diced tomatoes on top of the casserole. If you rpefer, sprinkle some parmesan cheese on top.
Bake in the oven for 35-40 minutes. Makes 8 large servings,
