Introduction

I set out looking for a recipe to use up my fruits that were going to be wasted and came up with these! I adapted this recipe from another spark recipe titled Blueberry Muffins. Ingredients

    2 large bananas (229 g) mashed
    1 large egg, slightly beaten
    1/3 C sugar
    1/4 C cinnamon applesauce (I used Great Value brand)
    1/2 C 1% milk
    1 + 1/2 C fresh blueberries
    1 + 3/4 C whole wheat flour (I used King Arthur)
    2 + 1/2 tsp baking powder
    Topping:
    1 tsp sugar
    1 tsp cinnamon

Directions

Preheat oven to 400 degrees

In a large bowl mix the banana, egg, sugar, applesauce, and milk together. Add the flour and baking powder and blend until well combined. Fold in the blueberries.

Spoon into a muffin pan. I used the pan that makes 12 muffins and deivided the batter evenly between them.

In a small bowl combine the sugar and cinnamon and sprinkle on top of each muffin.

Bake for 10 mins, and check them, adjust cook time accordingly. Done when a toothpick inserted in the center comes out clean.

Yeild: 12 muffins @ 132.2 calories each

*This was my first time baking with whole wheat flour! I just ate one of them and they were really, really good :)
