Introduction
I LOVE the green bean side dish they serve at Greek restaurants. This is my make at home version. A nice bonus is this dish is vegan :) I LOVE the green bean side dish they serve at Greek restaurants. This is my make at home version. A nice bonus is this dish is vegan :)Number of Servings: 4
Ingredients
-
4 cups frozen cut green beans
1 14.5oz can petite diced tomatoes
1 8oz can of low sodium tomato sauce
1 large onion
4 cloves of crushed or grated garlic
1 tablespoon of lemon juice
1 tsp of sugar
1 tbs olive oil
1 tsp dry oregano
salt and pepper to taste
Directions
This recipe makes 4 1-cup servings.
I prefer this with fresh green beans but using frozen makes it really easy.
-Put the olive oil in a medium sized pot over medium heat.
-Dice the onion and put it in the heated olive oil, cook till translucent and add the garlic.
-Just cook the garlic for a minute or so and add the diced tomatoes, tomato sauce, oregano, and sugar.
-Reduce and let simmer for 10-15 minutes so the tomatoes break down and the sauce thickens
-Add the green beans cover and allow them to cook for 10-20 depending on how done you like your beans.
-When the dish is ready add up to a tablespoon of lemon juice, stir and enjoy!
