This recipe is a winner. I used 6 4oz chicken breasts and doubled everything but the salsa. (Many slow cooker recipes benefit from doubling seasonings.) I like to shred the meat. It can be served in a number of ways. We had ours with rice and sweet corn. Adding to my slow cooker repertoire - 8/29/13

I will definitely say this recipe is a Keeper. It's delicious. We served it with black beans and brown rice. And made another meal by using it in a soft taco - 4/8/13

Very delicious! I actually diced up the chicken instead and added some corn..very yummy! You got the sweetness from the corm but also still had that kick of spice! Served over brown rice :) - 3/1/12

This was amazing! When we make it in my house, we add a bit more salsa and only 4 breasts. I usually let it cook for about 10+ hrs because we shred it and it just falls apart that way. Served over rice and it's delicious! - 2/11/12

I added just a little bit of cheese and ate this with a low carb tortilla. Yum! - 2/15/10
