Scallops stir fried with vegetables served over brown rice. Scallops stir fried with vegetables served over brown rice.
Number of Servings: 1


    4 oz. Scallops, raw
    1 cup Frozen Mixed Vegetables, Oriental mix
    1 slice of onion, medium
    1 clove garlic
    1 Tbsp. olive oil
    1 Tbsp. low sodium soy sauce
    1/4 tsp. ginger, ground
    1/4 tsp. dry mustard


Prepare brown rice for serving with the dish.

Heat oil in skillet, add garlic and onion. Saute until transparent. Add frozen vegetables and stir fry until cooked slightly. They should be on the crisp side. Add scallops and saute briefly. Add soy sauce and spices. Serve immediately. Garnish with slices of orange.
