Introduction
Preheat oven to 350 degrees. In the bowl of electric mixer, cream together the butter and brown sugar; add the applesauce and blend well. . Add the eggs, one at a time, mixing until thoroughly incorporated. Stir in the vanilla. Sift the dry ingredients and add to the creamed mixture a little at a time. Stir in the oats and chocolate carefully. Drop by tablespoon sized cookie scoop onto parchment paper covered cookie sheets, 2 inches apart. Bake for 10-12 minutes; do not over-bake.
