2 large or 4 medium sized potatoes
1 can of organic pinto beans
1 can of Las Palmas green enchilada sauce
1 jalapeno
6-8 tortillas
Directions
It doesn't get any easier than this! Scrub and dice potatoes.
Dice and boil in salt water. Once potatoes are cooked, drain. Drain pinto beans and add to potatoes. Pour in enchilada sauce. Serve on warmed tortillas.
Voila! Warm, filling, delicious!
