Ingredients

1/2 tbsp butter
1/2 red onion, sliced in rings
2 tbsp light sour cream
3 tsp herbs of your choice
1 large egg
salt and pepper
Directions
Preheat oven to 375.
In a small skillet, melt butter over medium heat. After the foaming subsides, add the onions. Sautee until tender and brown. About 5 minutes.
Meanwhile, coat a small ramekin with cooking spray. Coat bottom of the ramekin with the sour cream. Layer in the onions and your herbs. Make a well in the middle, and gently crack the egg into the well.
Put the ramekin in a larger baking pan and fill the baking pan with boiling water until the water reaches 1/2 way up the ramekin's side.
Place the baking pan with the water bath and ramekin in the oven. Bake until the egg is just done, about 9-20 minutes depending on your oven.
