Ingredients

    1 1/2 lb pork tenderloin cut in to 1 inch cubes
    1 tsp sesame oil
    1 clove of garlic
    1/2 tsp salt
    1/4 tsp black pepper
    1 tbsp reduced-sodium soy sauce
    1 tbsp seasoned rice vinegar
    3 tbsp very hot water
    2 tbsp peanut butter
    1 tbsp hoisin sauce
    1/4 teaspood grated fresh ginger
    2 tsp brown sugar
    Pinch of red pepper flakes (optional)

Directions

1. Soak 8 wooden skewers in water for at least 30 minutes. Preheat grill on med high.

2. Place 4 cubes of pork on to each skewer and place in a large baking dish. In a small bowl, whisk together the sesame oil, garlic, salt, and pepper and pour marinade over the pork.

3. Place skewers on teh grill and cook for 5 - 6 minutes turning once or until well browned and cooked through.

4. While the pork is grilling, vigorously whisk together the remaining ingredients in a small bowl. Drizzle the satay sticks with peanut sauce and serve.

Serving Size: Makes 8 skewers, 2 skewers per serving
