Ingredients

    sugar
    butter or margarine
    eggs
    very ripe bananas
    buttermilk
    vanilla
    flour
    baking soda
    salt
    chopped nuts (optional)
    chocolate, peanut butter or butterscotch chips (optional)

Directions

Put the oven rack on the low position. Heat oven to 350 degrees. Grease bottom of a loaf pan (1-9x5x3 OR 2-8.5x4.5x2.5).
Mix sugar and butter in a large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans. Bake 8-inch loaves one hour. Bake 9-inch loaf 1.25 hours.
Cool 10 minutes, take out of pan and put on rack.
Cool about two hours before slicing. Wrap tightly and store at room temperature up to four days or refrigerate up to 10 days.
