Add all dry ingredients to oats. Put the mixture in a food processor to make "crumbs". Add turkey, oat mixture and egg yolk to a large mixing bowl. Mix thoroughly by hand (not in a mixer). Roll into small balls (about 2 heaping TBSP of turkey per ball).
I start cooking them in an oven proof frying pan on the stove top with a couple of sprays of olive oil for good browning, then place in the oven to bake on 350 for about 20 minutes, but they can also go straight into the oven to bake without tthe first step!
Serving Size: makes 25-30 small meatballs.
