    1 Poached Egg
    2 cups Arugula
    1 large baked Sweet potato (cut into wedges)
    1/4 cup Black Olives
    1/4 cup chopped Cucumber (with peel)
    1 oz Cheddar or Colby Cheese, Low Fat, chopped
    2 Tbsp chopped Onions
    1 Tbsp balsamic vinegar
    2 tsp Olive Oil


Directions

Place poached egg over arugula tossed with sweet potaote wedges, black olives, cucumber, cheddar, onion, balsamic vinegar, and olive oil.
