Introduction

Put the cooked chicken in food processor and pulse til finely chopped
Grate the zucchini and onion into the chicken mixture, and add the Kamut bread crumbs (soft) which are torn into small pieces.
Combine the chicken broth with the mayo and add to chicken mix. Add the parmesan cheese, salt, sun dried tomatoes (cut into small pieces).
Roll the 15 oblong shaped croquettes in the dried bread crumbs
Bake at 200 celsius for 20-25 minutes, on a baking sheet with parchement paper, til croquettes are brown on bottom.

Ingredients

    -250 grams cooked chicken thighs
    - 2 medium-large zucchini, grated
    - 1 small onion, grated
    - 20 grams sun dried tomatoes (pref. not in oil)
    - 80 grams Kamut bread (torn into small pieces)
    - 1/2 tsp salt
    - 2 T Parmesan cheese, grated
    - .25 C chicken broth
    - 6 T Mayonaise, light
    - 1 cup dried bread crumbs

Directions

Put chicken in food processor and pulse til finely chopped
Add grated zucchini and grated onion, chop sun dried tomatoes into small pieces and add all to chicken. Tear the kamut bread into small pieces and add.
Combine the chicken broth with the mayo, season with salt and parmesan cheese and mix all together.
Roll the oblong shaped croquettes into 15 pieces.
Bake in 200 celsius oven, on parchement paper, for 20-25 minutes.
