Ingredients

    4 eggs
    1-1/2 cups egg substitute
    1 lg mushroom chopped
    1/4 cup spinach torn
    1/4 cup scallions
    1/4 cup shredded cheese
    2/3 cup turkey sausage crumbles

Directions

Beat eggs, mix in the rest. Put in muffin tin sprayed with Pam. Bake until a toothpick comes clean, about 20 min.
