Ingredients

    3.5 cups Old Fashioned Rolled Oats
    5 cups water
    4 oz Almonds (120 almonds)
    2.5 oz Dried Fruit Medley (about 8-9 pieces)
    3 tbsp Flax Seeds (ground)
    1/4 cup packed Brown Sugar
    2 tbsp Cinnamon
    3/4 cup of Granola (for topping, I like Kashi Cereal Clusters)
    1 cup nonfat milk (a splash for each serving)

Directions

I like to make one big batch for the week in a large bowl and stash it in the fridge.

Cut up dried fruit and almonds into smaller pieces (fruit will expand when rehydrated with water).

Mix oats, almonds, fruit, flax, sugar and cinnamon in a large bowl. Add water slowly to make it easier to mix.
* NOTE: I add only 3 cups of water when making a large batch to keep the volume down and make it easier to store in the fridge, but some water still hydrates the oats. I add more water along with the milk when reheating it in the microwave.)

Stash mixture (covered) in the fridge.

When ready to serve, scoop a cup's worth into a microwave-save bowl, pour about a half-cup of water on top (or more if you prefer a less dense oatmeal). Zap in microwave for 45 seconds. Stir, add more water if desired, then microwave for another 30 seconds.

Stir in about a tablespoon of nonfat milk to add creaminess, then finish with a tablespoon and a half of crunchy granola.
