Introduction

From "500 Low Glycemic Recipes" book. From "500 Low Glycemic Recipes" book.
Number of Servings: 12

Ingredients

    1 cup canned pumpkin
    1/2 cup Splenda
    1/4 cup 1% milk
    1/4 cup safflower oil
    1 egg
    1 3/4 cups whole wheat flour
    2 t. baking powder
    1 t. pumpkin pie spice
    Topping:
    1/2 cup Splenda brown sugar blend
    1/2 cup rolled oats
    1/2 t. pumpkin pie spice

Directions

Combine first 4 ingredients and blend well.
Combine flour, baking powder and spice. Blend into pumpkin mixture.
Fill muffin cups 1/2 full. Combine topping ingredients and spoon 1T. over each muffin.

Bake at 375 for 20 mins.
