Ingredients

-1- 6 inch corn tortilla
-3 oz. extra lean ground beef
-.125 cup red enchilada sauce
-14 grams onions (chopped)
-1 tsp. green chili peppers, (chopped)
-1.5 oz. cheddar cheese (grated)
*season to taste. Add chopped jalapeno pepper, coarse ground black pepper, ground red pepper, etc. if you want more bite.
Directions
-brown extra lean ground beef
-mix browned ground beef, chopped onions, chopped green chili peppers, approx. 1 tbsp of red enchilada sauce and .5 oz grated cheese together in a small bowl. Season as desired.
-roll the mixture of beef, onions, pepper, enchilada sauce and cheese in the corn tortilla
-place the corn tortilla in a narrow baking dish.
-cover the filled tortilla with the remainder of the red enchilada sauce
-sprinkle the remainder of the cheese on top of the filled tortilla
-bake at 350 degrees until the cheese is melted and browned.
*Serve hot with lettuce, rice and refried beans.
This works great for a quick dinner meal for one person. If you wish to make it for more than one you'll simply need to multiply all of the ingredients but the enchilada sauce by the number of persons you want to serve (1 enchilada per serving). When you have the appropriate number of filled tortillas in the baking dish simply cover the tortillas with about one cup of red enchilada sauce, sprinkle with the appropriate amount of cheddar cheese and bake at 350 degrees or until the cheese is brown on the edges.
