Ingredients

1 whole wheat low carb fajita sized tortilla
1/4 cup of egg beaters (or 2 egg whites)
2 slices of turkey bacon
2 tablespoons of salsa
1 table spoon of low fat shredded cheese
veggies of your choices (optional)
Directions
Heat up skillet
spray with non-stick cooking spray (or a little bit of olive oil spray if you have it)*note anything like olive oil or butter used to grease pan will change nutritional content)
put on slices of turkey bacon (you can microwave these too if preferable)
put eggs if pan is big enough
while eggs are cooking, sprinkle the cheese into them
make a mini-omelette with cheese and eggs
if you want, add some veggies in the mini
omelette
before fully cooked, place the tortilla in the microwave for 15 seconds to warm up
put eggs and bacon in warmed-up tortilla
add salsa
yummy-filling-and very very healthy :)
