Ingredients

    1 pound cooked Farfalle Pasta
    2 cups spinach, chopped
    1 can quartered artichokes, diced
    3 oz Feta Cheese
    1/4 cup cheddar cheese
    1/4 - 1/2 cup Mozzarella Cheese
    2 chicken thighs (boneless and skinless) - cooked and diced
    1/2 cup chicken broth (or drippings from cooked chicken)

Directions

Boil pasta as directed on package.
chop spinach and artichokes and stir fry in a large skillet until spinach is cooked.
Drain Pasta and return to pot, add spinach and artichoke mixture, half of Feta cheese, and 1/2 cup cheddar cheese, diced chicken, and 1/2 cup broth/ drippings - mix well.
Transfer mixture to 9x11 cake pan or casserole dish - sprinkle Mozzarella and remaining Feta over the top.
Bake, uncovered, for 35 minutes at 350 degrees.
Can be made ahead and frozen for an easy dinner for busy evenings!!
