Ingredients

2 cups cooked lentils
1 tbsp Dijon Mustard
1 tbsp packed brown sugar
1 tbsp balsamic vinegar
1/2 cup vegetable stock
1/2 cup ketchup
1 tbsp oregano
3 cloves garlic minced well
2 stalks celery chopped fine
1/2 cup chopped onion (1 whole medium)
1 tbsp olive oil
Directions
You need 2 cups of cooked lentils.
In a large pot sweat onion, olive oil and celery over medium high heat. Once the onion and celery has becomed soft, usually 5-8 minutes, add the garlic.
Stir well for aprox. 2 minutes. Once the garlic becomes fragrent, add all remaining ingredients. Stir well.
Once mixture starts to boil, turn the heat down and allow it to reduce a bit and tighten up. Total cook time is about 25-35 min.
Serve immediately, make ahead, or freeze.
