Ingredients

1 1/4 cup rolled oats (I use organic GF)
1 cup toasted pumpkin or pepita seeds
1/2 cup flax seeds
1.5 cups crispy rice cereal (GF)
1 cup dried cherries (or any other dried fruit you like) chopped
1/2 cup mini chocolate chips if desired
1/2 cup toasted coconut unsweetened
1 cup honey
1 tsp vanilla
1/2 tsp salt
Directions
Process dates and cherries, chop up fine. Then add these to oats, flax seed, rice cereal, pumpkin seeds (toast first) coconut (also toast first) and chocolate chips, if desired. Stir this to mix in large bowl.
Over medium heat, combine honey, vanilla and salt, bring to boil then pour over the other ingredients and incorporate.
Put mixture into a buttered/sprayed 8 X 8 pan and put in fridge to cool. Cut into bars when cooled.
Serving Size: makes 16 - 20 mini bars
