Ingredients

    750 grams lean ground beef
    1 large onion, diced
    2 tbsp prepared minced garlic
    2 large eggs, lightly beaten
    500 grams 1% cottage cheese
    2 Tbsp dried parsley
    500 grams mozzarella cheese
    6 lasagne noodles
    1 400mL can tomato sauce
    2 Tbsp Basil
    1Tbsp Oregano
    1/2 tsp black pepper

Directions

Bring a large pot of water to a boil, add noodles and cook according to package instructions. In separate frying pan, brown ground beef together with onion and garlic until no longer pink. Drain off all excess fat. Once brown, add tomato sauce, basil, oregano and pepper to beef. Mix well. Reduce heat and bring all to a gentle simmer to combine flavors. In a small bowl, combine eggs, cottage cheese and parsley, set aside. Slice block of mozzarella into thin slices. Assemble lasagne in a 9x13 pan starting with 3 noodles across bottom, then half of the cottage cheese/egg mixture, half of the mozzarella cheese, then half of the meat sauce. Repeat layers. Bake prepared lasagne in a 350 F oven for 30 minutes. Once baking is complete, allow to set at room temperature for 10 o 15 minutes to solidify layers. Cut into 12 pieces and serve.
