3/4 cup Egg whites (whites of 4 eggs)
2 large Eggs
1/2 cup nonfat Milk
4 strips, 2 servings Turkey Bacon, crisp and crumbled
1/2 shredded Swiss Cheese
1/2 cup fresh Spinach, chopped
1/3 cup Heart Smart Bisquick
1/2 Onions, sauteed with garlic
1 clove or 1 Tbsp. Garlic
Pepper, black, 1 dash
Salt, 1 dash
Hot Sauce to taste

Mix egg, egg white, and milk until well beaten. Add bisquick. Sautee 1/2 onion chopped fine and garlic chopped fine and stir into egg mixture. Add chopped spinach, turkey bacon or swiss cheese. Salt and pepper to taste. Add a dash of hot sauce if you like too. Pour into muffin cups sprayed with Pam. Bake in oven on 375 degrees for 30 minutes. Let cool. (These can easily be frozen once cooled, and tossed in the oven for 1 minute in the morning for breakfast on the go!)
Makes 12 single muffin cup servings, for 59.2 calories each!!!
