    Egg Whites - 32 oz carton
    Mushrooms sliced - 8 oz
    Spinach - 3 oz
    Asiago or other hard cheese shredded - 3/4 C
    Hot Sauce


Spray 9 X 13" pan with Olive Oil Pam
Put spinach on bottom of pan
Put mushrooms on top in one layer
Pour eggs over top
Sprinkle with Asiago
Add hot sauce to top to taste
Bake in 375 oven for 50 minutes

Serving Size: Cut into 6 equal pieces

  • Easy to make and very delicious. I did add diced tomatoes to add some color since I served it with the hot sauce on the side. Tasted much better than it looked since it does cook a little flat. Took it to work a party and it was one of the first items gone. I will make it again! - 2/6/15

  • This was so easy to make and yummy! Wish it was a little bit fluffier, but the taste is wonderful. It is very filling, as well. I'm dieting and the leftover casserole was great the next couple of days. I am making it again tomorrow. Loved it!

    Added bell peppers the 2nd time. Even better!
