Ingredients

1/2 large zucchini cut into match sticks
1 large red pepper cut into strips
85 grams Catelli Smart Fettuccine
1 chicken breast (skin removed) from rotisserie chicken
2 tablespoon olive oil (1 tbsp for roasting veggies, 1 for pasta)
1 cubic inch feta cheese
Oregano
Salt and pepper to taste
Directions
1) Boil water for pasta, when boiling add pasta to pot and cook according to directions
2) Chop zucchini into matchstick, chop red pepper into strips
3) Shred chicken breast from rotisserie chicken
4) Add peppers and zucchini with 1 tablespoon of olive oil to a roasting pan and put in the oven on broil for 5-10 minutes (watch it so it doesn't burn)
5) Add zucchini to pasta when there is about 3 minutes left of cooking time on pasta, drain when cooking time is up
6) Add chciken and red peppers to pasta
7) Add 1 tablespoon of olive oil, oregano and feta cheese to pasta, season with salt and pepper to taste.
Serving Size: Makes 2 servings
