Ingredients

    1 cup cherries, fresh, frozen or canned
    1/3 cup dark or semi-sweet chocolate chips
    2/3 cup whole wheat flour
    1/3 cup Fibre One flour (made by grinding Fibre One Cereal in the food processor until it becomes the consistency of flour)
    1/3 cup oat bran
    3/4 cup sugar, preferably organic cane
    1 large egg
    2 egg whites
    1/2 cup fat free greek yogurt
    1/2 cup skim or 1% milk
    3 tbsp. canola oil (could substitute coconut oil or other healthy oil)
    1 scoop whey protein
    1 tsp. baking soda
    1 1/2 tsp baking powder
    1/4 tsp. salt

Directions

Combine all the wet ingredients, add the dry and beat until combined well. Fold in the cherries and chocolate chips, put in greased muffin tins (or line with paper cups) and bake at 350F for 20-25 min. or until lightly browned.
