Ingredients

    1 small baguette - 8oz.
    2T olive oil

    1 Red Pepper, cut into big chunks
    1 Yellow Pepper, cut int big chunks
    1 English Cucumber, sedded (scoop out w/ spoon), cut into chunks
    2 Big, ripe tomatoes
    2T capers
    fresh basil
    1/2 red onion, sliced

    Vinagrette
    1 clove garlic, crushed
    1/2 tsp dijon mustard
    3T Olive Oil
    3T White Wine Vinegar

Directions

Cut baguette into chunks like large croutons. Heat 2T olive oil in pan, then add bread. Season with salt and pepper. Toast until brown.
To make vinagrette, combine and whisk together the 4 ingredients. In large bowl, all all chopped veggies, top with toasted croutons and toss with vinagrette. Let sit for a little bit to soak in flavor - ENJOY! Serves 6.
