Introduction

Number of Servings: 6

Ingredients

    1 Tbsp olive oil
    1 small onion chopped
    3 stalks celery chopped
    3 medium carrots chopped
    1 small winter squash about 2 cups cubed.
    salt, pepper to taste
    katjap mais (optional)

Directions

Saute chopped onion, celery, and carrots with 1 tablespoon (or less) olive oil. Add salt and pepper and allow to sweat.
Poke a couple holes in the squash and microwave for 5 minutes. This makes peeling and scooping out the seeds easier. You can toast the seeds for garnish.
Add chopped squash to other vegitables and cover with water. Add a dash of Ketjap Manis if desired. Cook till all vegitables are soft. Puree, adjust seasoning. (you may need to add more water. Taste rich and creamy.
