Introduction

Number of Servings: 1

Ingredients

    1 tsp olive oil
    1 garlic clove
    1/3 c cooked lentils
    1/3 c black beans
    1 small tomato chopped
    2 tsp cumin
    2 tsp chili powder
    1 tsp paprika
    2 tsp oregano
    1/4 c vegetable or chicken broth

    2 taco sized mission 96% fat free mission tortillas (or 1 burrito sized tortilla)

Directions

Crush garlic and saute in oil for 1 min. Add beans and spices and saute for another min. Add tomatoes and broth and saute until the sauce thickens. Serve with tortillas sour cream and salsa.

You can adjust spices to your taste or try adding a pinch of cyan pepper for spicy tacos.

Serving Size: makes 2 tacos or 1 burrito
