Introduction

Tofurky tempeh marinated in coconut and curry was not as good as just almonds as a protein. A full bag of Lundbery wild rice can be cooked ahead then frozen in 1 C. amts. for future dishes. Ingredients

    1 C. water
    1 C. chopped celery
    1/2 C. chopped carrots
    1 1/2 C. sliced mushrooms
    1/2 C. chopped onions
    1 tsp curry powder
    2 Tsp red Miso paste
    1 Tsp sriracha
    1/2 tsp dry parsley
    1 Tbl. creamy peanut butter
    1 C. cooked Lundbergs wild blend
    dash to taste: coriander, cardamon seed, garlic powder, salt and pepper
    2 Tbl. craisons
    12 plain or Wasabi almonds

Directions

Lightly oil frying pan with olive oil, Throw in celery and carrots and start to saute while cleaning and slicing mushrooms. Add mushroom and saute
Dissolve Miso paste in 1 cup warm water. Add salt to taste

Add miso and craisons to the veggies. Adjust flavor with the misc spices, then add sriracha to taste, stir and add the cooked wild rice.

Mix in the almonds the last minute of heat to slightly soften
