Introduction

Quick and easy. I make this all the time. When you boil your pumpkin keep the water when you drain it - gives the soup a better flavour and good for you too! My sister puts garlic in as well. Number of Servings: 4

Ingredients

    4 cups cooked mashed pumpkin
    500 ml water ( or water that the pumpkin was boiled in )
    1 onion diced
    30 g bacon - fat removed
    1 bacon stock cubes
    4 tbsp light sour cream

Directions

Chop bacon into small pieces. Put into a frying pan with a tablespoon of water. Broil gently. Add onion and broil for approx 3 mins until onion is soft.
Put mashed pumpkin into large saucepan. Heat on low heat.
Add onions and bacon. Add stock cube and water.
Simmer for 10 minutes.
Serve with low fat sour cream and chives.
