Introduction
These are healthy, delicious and best of all, low fat!This recipe uses canned 100% pure pumpkin, with nothing added, not canned pumpkin pie mix. You can substitute all purpose flour for the whole grain. I use whole grain flour in all my baking...it gives you 14% of your daily value of fiber in just 1/4 cup!

Ingredients

2-3/8 cups whole grain flour
1/2 cup sugar
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3/4 tsp nutmeg
3/4 tsp cinnamon
3/4 tsp cloves
6 egg whites (equivalent to 3 whole eggs)
1 14 oz can pure pumpkin
1/2 cup unsweetened apple sauce
1 cup chopped walnuts (or pecans)
Directions
Preheat oven to 350. Grease 12 cup muffin tin.
Combine flour, sugar, baking powder, soda, salt, nutmeg, cinnamon and cloves.
In a separate bowl, mix eggs, pumpkin and applesauce until smooth.
Add to dry ingredients and stir thoroughly to make a smooth batter.
Stir in walnuts.
Spray muffin tins with no stick spray. Do not use paper muffin cups as this recipe is too sticky. Unsprayed silicone muffin pan works best.
Spoon into muffin tins 2/3 full and bake 30-35 minutes.
