Introduction

Ingredients

2 cups 2% or nonfat milk
1 Tablespoon Sugar
2 packets yeast
2 1/2 cups whole wheat flour
2 cups white flour
1/2 cups oats
1 teaspoon salt
Directions
In a small sauce pan, heat the milk until temp reaches 99 (do not overheat) Add the sugar and stir until mixed. Now add the yeast and let stand for 5 minutes to proof the yeast.
In a large bowl mix the whole wheat flour, salt and oats together. Add the milk and yeast mixture and mix well.
Slowly add the white flour a bit at a time until dough forms. If kneading by hand, knead for 15 to 20 minutes or until dough is soft and springy. With a sand mixer use dough hook and knead for 8 minutes. Careful not to over do it.
Place dough in a greased bowl and let stand in warm place for 20 to 40 minutes or until double in size.
Remove from bowl and punch down. fold into thirds, punch again and fold into thirds to make a loaf shape. Placed in greased loaf pan and allow to rise for another 20 to 40 minutes.
Bake in oven for 25 to 30 minutes. Remove and place on wire rack to cool. Let stand for 5 minutes then remove from pan and cool completely.
