Introduction

Costa Rican style Costa Rican style
Number of Servings: 10

Ingredients

    2 lbs dried black beans
    1/2 onion
    handful of cilantro
    1/2 red pepper
    water
    salt to taste - usually 1-2 tsp

Directions

-soak beans overnight
-place them in crock pot and fill with water - you can also use vegetable broth, but it is not necessary
-add fire roasted diced tomatoes and / or Rotel
-cook in slow cooker - mine does best on high for 4 or 6 hours, then on low until I am home from work
-dice cilantro and red pepper and place in crock pot for last 1/2 hour of cooking
-saute onion and some garlic on the stove and add that with other veggies
-spice to taste - I use cumin, chipotle powder, and mexican oregano
-serve with boiled eggs if you wish
