Introduction

I used chicken thighs because they have a lot of flavor and not much more fat than the breast if you remove the skin. I also use fresh salsa instead of jarred - tastes like summer all year! Ingredients

    1 boneless chicken thigh
    1/2 cup chicken broth
    1/4 onion, sliced
    1/2 teaspoon chili powder
    1/2 teaspoon cumin
    1/2 teaspoon garlic powder
    1/8 teaspoon salt
    1/8 teaspoon pepper
    2 corn tortillas
    cooking spray, 4 sprays
    1/4 avocado, sliced or cubed
    4 tablespoons salsa

Directions

Rinse and cook chicken thigh over medium heat in chicken broth until cooked through, about 20 minutes. I left the skin on until it was cooked and could be easily removed. When chicken is cooked and skinned, add seasoning and onion. Cook down until liquid is absorbed. Warm tortillas in another pan over medium heat. Lightly coat both sides of tortillas with cooking spray and heat until softened. Divide chicken and fill tortillas. Top with avocado and salsa.

    Incredible!
    Delicious and simple. We even added some light sour cream and a little 2% shredded cheese and it is still under 500 calories. Thanks for a good summer time dish. - 4/12/11
