    Fermentee - 8-16 hours before bread
    water 175g
    fresh yeast 4g
    bread flour 225 grams

    bread flour 575g
    water 400 g
    yeast 4g
    salt 15g
    olive oil 30g
    olives 4oz
    parmesan cheese 3 oz


Directions

prepare the starter - fermetta 8-16 hours before bread

mix all bread ingredients until while hydrated, then rest 20 min, stretch 3 times, rest 20 min, stretch 3 times, rest 20 min, stretch 3 times, rest 20 min.

after final rest stretch dough into well oiled pan, use olive oil. once stretched allow to rise until double in size. then create moisture wells and pour heated oil 3 oz, garlic and rosemary to taste, bake until golden brown.
