These muffins have lots of fiber and flavor. These muffins have lots of fiber and flavor.

Ingredients

    2 cups Kashi Heart to Heart cereal
    1 cup Old Fashioned Oats
    6 Tbsp. Flaxseed meal
    1/2 cup almonds, dry roasted, no salt
    1.5 cups rice milk (any type of milk works)
    1 egg
    1 cup pumpkin, canned (or any fruit puree like applesauce)
    2 Tbsp. honey
    1.5 tsp. baking powder
    0.5 tsp baking soda
    1.5 tsp cinnamon
    0.5 tsp nutmeg
    1/2 cup Craisins (or other dried fruit, like raisins)

Directions

In food processor, grind almonds, then add cereal, oats, flaxseed meal, baking powder, baking soda, cinnamon & nutmeg, and blend until smooth.
In a large bowl, mix together milk, egg, fruit, and honey. Add dry ingredients all at once and mix thoroughly.
Spray muffin tin and fill each cup. Bake 400 degrees for 25-30 minutes.
