Ingredients

    2 # black beans, cooked (~12 cups)
    2 onions, diced
    several ribs celery, chopped
    2 bell peppers, chopped
    6-8 garlic cloves, minced
    1# ham, diced small
    salt
    pepper
    1 -2 t thyme
    4 bay leaves
    chopped green chilies, to taste
    hot sauce, to taste

Directions

Saute onion, celery, bell pepper for several minutes
Add garlic and saute a bit longer
Add sauteed veggies to the beans, along with ham and seasonings
Simmer for a couple of hours

Serving Size: Makes 36 1/2 cup servings
