Introduction

Ingredients

    1 lb lean ground beef
    1/2tbsp onion - dried
    2tbsp all-purpose flour
    2tbsp Garlic Powder
    1/2tsp Cumin

    Sauce:
    6tbsp Garlic Powder
    1/3c Butter
    1/2c all-purpose flour
    1c Beef Broth (via bullion cube)
    2tbsp Bueno Green Chile

    9 Flour Tortillas - burrito size
    1c Shredded Cheese

Directions

1) In a saucepan, saute garlic in butter until tender. Stir in flour until blended. Gradually stir in broth and green Chile; bring to a boil. Cook and stir for two minutes or until thickened.

2) Meanwhile in another saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the flour and seasonings until blended.

3) Heat 9 tortillas in microwave for 10-15 seconds.

4) Layer ingredients on plate. Tortilla, beef, sauce; repeat.

Makes maybe 8 enchiladas.

We pair this with Spanish Rice and Beans. I often add sour cream to the mix as well. REALLY good!
