Most of the baking we now do is for bread either the conventional way or by means of a bread machine I use the bread machine more now even for bread dough just to mix and prove the dough as I do have a problem with my hands and I can’t knead the dough as I used to.
We developed all our bread machine recipes for the Panasonic SD-257/SD-256 though every one of our machine recipes are easily modified for other machines; all machines on the market today have a dough or manual cycle, this cycle is one of the most important cycles your delight machine has, it is what makes the bread machine so helpful. Using the dough or manual cycle and your favourite bread recipes you can make sandwich rolls, dinner rolls, bagels and much more any recipe you have for yeast risen bread can be done on the dough cycle, shaped, risen and baked for just about a limitless number of baked treasures.

Ingredients

    1 teaspoon, yeast
    400 grams, strong wholemeal flour
    1 teaspoon, Diax - Diastatic Malt Flour
    1 tablespoon, vital wheat gluten
    2 teaspoons, sugar
    75 grams, butter
    2 teaspoons, ground cinnamon
    1 teaspoon, mixed spice
    1 teaspoon, ground ginger
    2 medium eggs, beaten
    120 mls water
    120 mls, milk
    150 grams, mixed dried fruit

Directions

Serves / Makes: 16 slices
Prep-Time: 5 minutes
Program/Cycle: 5 hours, whole wheat, bake raisin settings

Place the measured ingredients in the bread pan, placing the dry yeast at the bottom, you do not want it to mix with the water just yet. Cover the yeast with all the dry ingredients (flour, sugar, salt etc.)
Add any additions (nuts and/or fruit) to the additions dispenser or when the additions beeper sounds. Pour in the water and any other liquids, put the pan in the bread maker close the lid and set on the recommended setting and start.

Diax Malt Flour – Diastatic (enzyme active) malt flour, made from finely ground malted barley used in small quantities.
Use 0.5 to 1 gram per 100 grams of flour
Typical Quantity is 1 Level Teaspoon per 500 grams of flour
To give improved rise, softer crumb and more crust colour development without the need for adding sugar.
Vital Wheat Gluten; A wheat Protein, This is an essential ingredient in bread making. Gluten will help supply the glutinous fibres that hold the gas the fermenting sugars produce, which help the bread expand and rise.
