Number of Servings: 12

Ingredients

    Dry Ingredients:
    All Purpose Flour
    Baking Soda
    Baking Powder
    Flax, Cold Milled
    Vanilla Protein Powder
    Cinnamon
    Salt
    Sugar

    Wet Ingredients:
    Egg Whites
    Butter
    Yogurt
    Apple - fresh

Directions

Preheat oven to 400 degrees

Line muffin tin with papers and spray with cooking oil or flour and oil each cup ahead of time for easy release.

Finely chop apple and set aside

Melt butter, mix with sugar and yogurt in a mixing bowl.
Mix in cinnamon and egg whites
incorporate protein powder

Mix remaining dry ingredients in a bowl, salt, soda, baking powder, flax and flour.

Add the dry ingredients to the yogurt mixture until just moist, batter shouldn't be smooth. Stir in finely chopped apples into the batter.

Spoon mixture into prepared muffin cups, filling 2/3rds full.

Bake for 25 minutes in an oven preheated to 400 degrees. take out when golden brown and toothpick comes out clean.
