Ingredients

1 lb cooked salad shrimp-thawed
1 bag of shelled edamame/soy beans( 2.5 cups)
1 can white beans( rinsed well)
1 large tomato diced
1/4 cup minced red onion
1/2 cup loosely packed fresh cilantro( chopped after you measure)
1/3 cup fresh lime juice
5 Tbls fat free mayo
1 Tbls Olive oil
1/2 teas salt
1/2 teas pepper
Directions
Place edamame in boiling salted water- until tender( 5 min)
Drain and blanche with cold water!
Meanwhile mix shrimp, beans, tomato, onion and cilantro in Large bowl. Add edamame. Mix all remaining ingredients in smaller bowl and whisk until thick and smooth. Adjust salt and pepper if desired. Toss dressing over salad and serve.
Serving Size: Makes Six 1.25 cup servings
