Ingredients

Meatloaf
Ingredients:
1.25 lb ground turkey or turkey Italian sausage
4 slices whole wheat bread, cubed
1-1/2 tsp onion flakes
1 tsp Touch of Herbs (or similar, like Mrs. Dash)
1/2 tsp pepper
1 tsp salt
1 5 oz can evaporated milk
1-2 eggs
Directions
Directions:
1. Mix meatloaf ingredients. Place in cooking sprayed 5x9 loaf pan (for variations see below).
2. Poor squiggle of BBQ sauce on top.
3. Bake ~1-1/2 hours at 350 degrees F.
Meatloaf Cupcakes
Ingredients:
Meatloaf ingredients as shown above
"Icing" Mashed potatoes
2-1/2 pounds potatoes
1/2 C milk
3 tbsp butter
1 tbsp beet (pureed) (opt)
1 bunch fresh parsley, minced (opt)
1 pack Indian fennel candies (opt)
Directions:
1. Preheat oven to 450 degrees F.
2. Line 12 cupcake tin with liners and spray with cooking spray.
3. Mix meatloaf ingredients.
4. Distribute meatloaf mix to 12 cupcakes.
5. Bake 20 minutes, cut one open and test for doneness. Reserve.
"Icing" (Mashed Potatoes)
1. Cube potatoes and boil in a large pot of water until tender to touch of fork.
2. Drain water and mash with butter and milk.
3. (Opt) Divide potatoes into two separate bowls. Add 1 tbsp pureed beet to one batch and all parsley to other. Blend until you have a batch of pink and a batch of green "icing." Cover and reserve.
4. When meatloaf is done, "frost" half with pink and half with green mashed potatoes. Sprinkle with Indian fennel candy (optional). Serve immediately
Pumpkin Meatloaf
Ingredients:
2 Each 5-6" diameter pumpkins (core cleaned, reserve seeds for toasting separately)
Jack-o-Lantern face, optional
Directions:
Preheat oven to 350 degrees F.
Mix meatloaf ingredients
Pack pumpkin to heaping, set pumpkin top on at an angle
Cook 1-1/2 hours at 350 degrees until meat is cooked and fork pierces pumpkin easily
