Ingredients

    3 ultra thin corn tortillas
    .75 cup light ricotta
    .25 cup chunky salsa
    .5 cup shredded potatoes
    1 tsp nutritional yeast

Directions

Mix Ricotta and nut. yeast together and set aside
place 1.5 tortillas on bottom of dish
Layer .5 cup ricotta, potatoes and 1/2 salsa
top with 1.5 tortillas, .25 cup ricotta and rest of salsa
Cook 15 minutes

Serving Size: 1/2 casserole
