Introduction

Ingredients

Egg, fresh, 1 medium
Egg white, 1 white
Egg substitute, liquid (Egg Beaters), 1.5 cup
Mushrooms, fresh, 2 cup, pieces or slices
Broccoli, fresh, 1 cup, chopped
Pork Tenderloin, 16 oz
Sweet potato, 1 medium (2" dia, 5" long, raw)
Directions
Preheat oven to 350F.
Saute mushrooms in a saucepan. Remove and set aside.
Cook the pork tenderloin with seasonings of choice.
Microwave the broccolli until cooked through, and chop to about the same size as the mushroom pieces.
Spray a 8x8 pan with Pam.
Wash the sweet potato, and slice the sweet potato (raw) into thin slices and arrange as a crust (overlapping slices) on the bottom and sides of the pan.
Cut the the pork into chunks and mix with the eggs, brocolli and mushrooms. Pour into sweet potoato lined pan. Cook for about 30min or until set.
