Introduction

Ingredients

    I pork shoulder approx. 6 lbs, 5 tsp cumin, 2 tsp kosher salt, 2 large chopped onions, 5 cloved of garlic, 1 bottle of Goya Mojo

Directions

Lay pork shoulder fat side up in a roasting pan. Score the fat in "x" shapes with a knife, and sprinkle with kosher salt. Rub cumin (can use more or less to taste) all over top and sides of pork. Chop 2 cloves of garlic and push slices into the score marks onthe top of the roast. Place the over 3 cloves into the pan. Rough chop 2 large onions and seperate the layers. Cover the top of the pork with the onion, and place the rest in pan around pork. Do NOT shake the bottle of Mojo (you want the spices to run out last and puddle on the top of the pork), openthe bottle and empty contents onto the top, and around the pork. Wrap the roasting pan very thightly with foil. Place pork in oven on 225 overnight (10 to 12 hours) until falling apart and tender. Let rest for 15 minutes and slices or shred. Serve with cuban slaw and black beans.
