Introduction

If you have ever been to the Chicago area and had an Italian Roast beef sandwich you know you just can't get something like that in most areas! This recipe comes the closest I've found to that taste. Only real difference is the shredded roast beef instead of shaved. Ingredients

    3lb roast
    Packet of Good Seasons Italian Dressing mix
    1 T cider vinegar
    16 oz jar Pepperoncinis (I use deli sliced, but whole is fine if you want to be able to pick them out easily)
    water- will vary, I used approx. 18 oz)

Directions

Place roast in a crock pot. Slice onion to your preferred size and scatter around the roast (you can use up to a whole onion if preferred, I usually just use what I have on hand in the frig). Sprinkle Italian seasoning packet all over roast. Add pepperoncinis and vinegar. You can use less peppers or not use the juice if you prefer less spicy. Cook on low for 6-8 hours or High for 4 hours. When done, take roast out and shred. Return to crock pot for about 30 minutes to allow all the meat to soak up the flavor. Serve on a steak or hoagie style bun. Do not use airy breads like hot dog and hamburger buns, they will turn to mush with the yummy broth!
