Introduction

Chock full of goodness with low fat compared to a beef chili. Substitute your favourite beans and vegetables and serve with rice, short pasta or a toasted bun or bread. Ingredients

    Onions, raw, 1 small, chopped
    Garlic, 3 cloves, minced
    Green Chili Pepper, 1 split lengthwise
    Red Ripe Tomatoes, 2 medium, chopped
    Canned Whole Tomatoes, 1 can
    Mushrooms, fresh, 3 large, chopped
    Zucchini, 1 small, chopped
    Spinach, fresh, 1/3 of a bunch, stems removed
    Extra lean ground chicken, 450g
    Beans, red kidney, 110 grams Cooked or drained & rinsed from can
    Beans, navy, 100 grams Cooked or drained & rinsed from can
    Salt, 1 tsp
    Ground Cumin, 1 tsp
    Fresh Basil, 5 leaves, shredded
    Pepper, black, 1 tsp
    Oregano, dried 1 tbsp
    Parsley, dried, 1 tbsp
    Campbell's low sodium chicken broth, 1/2 cup
    Diana Sauce Gourmet Rib & Chicken BBQ Sauce, 1 tbsp (or other BBQ sauce)
    Ketchup, Heinz, 1 tbsp
    Peppers, sweet, red, fresh, 1 medium chopped

Directions

Except for the chopped sweet red pepper, throw all other ingredients into a slow cooker and combine. Turn slow cooker on low and allow to cook for 6-8 hours.
When finished, sprinkle on the raw chopped red pepper and serve on rice, with pasta or with toasted bread or bun.
